Broccoli and Potato Soup Recipe

Broccoli and Potato Soup is a comforting, creamy, and hearty dish that’s perfect for cooler days. It combines the earthy flavors of broccoli with the richness of potatoes to create a filling and nutritious meal.

Ingredients:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 3-4 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 4 cups broccoli florets (about 2 small heads of broccoli)
  • 4 cups vegetable broth (or chicken broth)
  • 1/2 cup heavy cream or milk (optional for creaminess)
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme (optional)
  • 1/2 teaspoon ground nutmeg (optional)
  • Shredded cheese (optional, for serving)
  • Fresh parsley or chives, chopped (for garnish)

Instructions:

1. Sauté the Onion and Garlic:

  • In a large pot, heat the olive oil and butter over medium heat.
  • Add the chopped onion and cook for about 4-5 minutes until softened and translucent.
  • Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

2. Add the Potatoes and Broccoli:

  • Add the diced potatoes to the pot and stir to combine with the onions and garlic. Cook for 2-3 minutes.
  • Then, add the broccoli florets and season with salt, pepper, thyme, and nutmeg (if using).

3. Add the Broth:

  • Pour in the vegetable broth (or chicken broth) and bring the mixture to a boil.
  • Reduce the heat to low, cover the pot, and let the soup simmer for about 15-20 minutes, or until the potatoes and broccoli are tender.

4. Blend the Soup:

  • Once the vegetables are cooked, you can use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only part of the soup or leave some chunks intact.
  • If using a regular blender, carefully transfer the soup in batches, blend until smooth, and return it to the pot.

5. Add Cream (Optional):

  • If you want a creamier soup, stir in the heavy cream or milk and heat the soup gently for another 2-3 minutes.
  • Taste and adjust seasoning with more salt and pepper if needed.

6. Serve:

  • Ladle the soup into bowls and garnish with shredded cheese, fresh parsley, or chives.
  • Serve with crusty bread or a side salad for a complete meal.

Tips:

  • For a dairy-free version, substitute the cream with coconut milk or simply skip it altogether.
  • Add a bit of shredded cheddar cheese into the soup for a cheesy broccoli flavor.
  • If you prefer extra veggies, add some carrots or celery to the soup along with the potatoes.

Enjoy your warm and comforting Broccoli and Potato Soup, a perfect blend of wholesome vegetables in every bite!
