Breakfast Burrito

A Breakfast Burrito is the ultimate morning meal, packed with protein, flavor, and all your favorite ingredients wrapped in a warm tortilla. It’s versatile, quick to make, and perfect for an on-the-go breakfast or a hearty brunch.

Ingredients:

  • 4 large flour tortillas
  • 6 large eggs
  • ½ cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • 4 slices of bacon or 4 sausage links (cooked and crumbled)
  • 1 cup diced potatoes (optional: hash browns or cooked potatoes)
  • ¼ cup chopped onions
  • ¼ cup chopped bell peppers (optional)
  • Salsa, sour cream, or guacamole (for serving)
  • Salt and pepper (to taste)
  • Butter or oil (for cooking)

Instructions:

  1. Prepare the Ingredients:
    • Cook the bacon or sausage in a skillet until crispy. Set aside and crumble.
    • In the same skillet, sauté the diced potatoes, onions, and bell peppers until golden and cooked through. Set aside.
  2. Scramble the Eggs:
    • In a bowl, whisk the eggs with salt and pepper.
    • Heat a little butter or oil in a skillet over medium heat. Add the eggs and cook, stirring occasionally, until fully scrambled. Remove from heat.
  3. Assemble the Burritos:
    • Warm the tortillas in a pan or microwave for about 10-15 seconds to make them more pliable.
    • Lay each tortilla flat and layer with scrambled eggs, bacon or sausage, cooked potatoes (if using), and shredded cheese.
    • Add any additional toppings like salsa, sour cream, or guacamole.
  4. Roll the Burritos:
    • Fold in the sides of the tortilla, then roll it up from the bottom, tucking in the sides as you go.
  5. Optional:
    • Toast the burritos in a skillet for 1-2 minutes on each side to make them crispy.
