Bread and Butter Pudding Recipe

Bread and Butter Pudding is a classic dessert made from layers of buttered bread, usually stale or leftover, baked in a rich custard mixture of eggs, milk, cream, sugar, and flavorings. This comforting dish is known for its warm, custardy texture and can be flavored with various additions such as raisins, cinnamon, nutmeg, or vanilla. It’s a great way to use up leftover bread and creates a delicious, nostalgic treat.

Ingredients:

  • 8 slices of stale bread (white, brioche, or challah work well)
  • 4 tablespoons unsalted butter, softened
  • 3 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • ¾ cup granulated sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup raisins or sultanas (optional)
  • Zest of 1 lemon or orange (optional)

Instructions:

1. Prepare the Bread:

  • Preheat your oven to 350°F (175°C).
  • Butter each slice of bread on one side. If using, cut the bread into triangles or squares.
  • Arrange half of the bread slices, buttered side up, in a greased baking dish (around 8×8 inches or similar).

2. Add Fillings (if using):

  • Sprinkle the raisins or sultanas over the first layer of bread, along with any citrus zest and half of the cinnamon.

3. Layer the Bread:

  • Place the remaining bread slices on top, buttered side up.

4. Make the Custard:

  • In a mixing bowl, whisk together the eggs, milk, cream, sugar, vanilla extract, and remaining cinnamon until well combined.

5. Combine and Bake:

  • Pour the custard mixture evenly over the bread layers, ensuring all the bread is soaked.
  • Allow the pudding to sit for about 15-20 minutes to absorb the custard.
  • Bake in the preheated oven for 35-45 minutes, or until the top is golden brown and the custard is set (a knife inserted in the center should come out clean).

6. Serve:

  • Let the pudding cool slightly before serving. It can be enjoyed warm or at room temperature.
  • Serve with a drizzle of cream, custard, or a scoop of ice cream for added indulgence.

Tips:

  • For extra flavor, consider adding nutmeg, almond extract, or chocolate chips.
  • You can use different types of bread or even croissants for a richer pudding.
  • Leftover pudding can be stored in the refrigerator and reheated for a quick dessert later on.

This Bread and Butter Pudding is a warm, comforting treat that’s perfect for chilly days and is sure to bring back fond memories!
