  • Optional: 1 cup cooked spinach, mushrooms, or other vegetables

Instructions:

  1. Prepare the Crust:
    • In a large bowl, combine the flour and salt.
    • Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Add ice water, one tablespoon at a time, and mix until the dough comes together.
    • Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat the Oven:
    • Preheat the oven to 375°F (190°C).
  3. Roll Out the Dough:
    • On a lightly floured surface, roll out the chilled dough to fit a 9-inch pie dish.
    • Transfer the dough to the pie dish, trim the edges, and crimp as desired.
  4. Blind Bake the Crust:
    • Line the crust with parchment paper or aluminum foil and fill with pie weights or dried beans.
    • Bake for 15 minutes, then remove the weights and paper/foil and bake for an additional 5-7 minutes until lightly golden. Remove from the oven and let cool slightly.
  5. Prepare the Filling:
    • In a medium skillet, cook the diced onion until soft and translucent. If using other vegetables, cook them until tender.
    • In a large bowl, whisk together the eggs, milk or cream, salt, pepper, and nutmeg (if using).
  6. Assemble the Quiche:
    • Spread the cooked meat, onion, and any other vegetables evenly over the bottom of the crust.
    • Sprinkle the shredded cheese on top.
    • Pour the egg mixture over the filling.
  7. Bake the Quiche:
    • Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top. A knife inserted into the center should come out clean.
    • Let the quiche cool for at least 10 minutes before slicing and serving.
