Quiche is a savory, open-faced pastry filled with a mixture of eggs, cream or milk, cheese, and various other ingredients such as meats, vegetables, and herbs. It’s a versatile dish that can be served for breakfast, brunch, lunch, or dinner. Here is a classic quiche recipe:
Classic Quiche Recipe:
Ingredients:
For the Crust:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
- 3-4 tablespoons ice water
For the Filling:
- 1 cup cooked and crumbled bacon, diced ham, or cooked sausage
- 1/2 cup diced onion
- 1 cup shredded cheese (such as Gruyère, Swiss, cheddar, or a combination)
- 1 1/2 cups milk or heavy cream (or a combination)
- 4 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg (optional)
- Optional: 1 cup cooked spinach, mushrooms, or other vegetables
Instructions:
- Prepare the Crust:
- In a large bowl, combine the flour and salt.
- Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, and mix until the dough comes together.
- Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the Oven:
- Preheat the oven to 375°F (190°C).
- Roll Out the Dough:
- On a lightly floured surface, roll out the chilled dough to fit a 9-inch pie dish.
- Transfer the dough to the pie dish, trim the edges, and crimp as desired.
- Blind Bake the Crust:
- Line the crust with parchment paper or aluminum foil and fill with pie weights or dried beans.
- Bake for 15 minutes, then remove the weights and paper/foil and bake for an additional 5-7 minutes until lightly golden. Remove from the oven and let cool slightly.
- Prepare the Filling:
- In a medium skillet, cook the diced onion until soft and translucent. If using other vegetables, cook them until tender.
- In a large bowl, whisk together the eggs, milk or cream, salt, pepper, and nutmeg (if using).
- Assemble the Quiche:
- Spread the cooked meat, onion, and any other vegetables evenly over the bottom of the crust.
- Sprinkle the shredded cheese on top.
- Pour the egg mixture over the filling.
- Bake the Quiche:
- Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top. A knife inserted into the center should come out clean.
- Let the quiche cool for at least 10 minutes before slicing and serving.
Tips:
- Crust: You can use a store-bought pie crust to save time.
- Fillings: Customize the quiche with your favorite fillings. Popular additions include sautéed mushrooms, spinach, bell peppers, and various cheeses.
- Cheese: Gruyère, Swiss, and cheddar are traditional choices, but you can experiment with others like feta or goat cheese for different flavors.
- Make-Ahead: Quiche can be made ahead and reheated. It also freezes well; just thaw and reheat in the oven.
