Beef Lombardi Casserole is a layered comfort classic made with tender egg noodles, a creamy sour cream and cream cheese base, rich seasoned beef, and gooey melted cheese. It’s cozy, satisfying, and perfect for feeding a hungry crowd or freezing for later.

Ingredients:

  • 1 tablespoon olive oil

  • 1 lb (450g) ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 (14 oz) can diced tomatoes, undrained

  • 1 (6 oz) can tomato paste

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon Italian seasoning

  • 2 cups cooked egg noodles

  • 1 cup sour cream

  • 4 oz cream cheese, softened

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 2 tablespoons chopped parsley (optional, for garnish)

Instructions:

1. Cook the beef mixture:

  • Heat olive oil in a large skillet over medium heat. Add onion and cook until soft.

  • Add garlic and cook 1 minute more.

  • Stir in ground beef and cook until browned. Drain excess fat.

  • Add diced tomatoes, tomato paste, salt, pepper, and Italian seasoning. Simmer for 10 minutes.

2. Mix the creamy base:

  • In a separate bowl, mix sour cream and cream cheese until smooth.

  • Stir in cooked egg noodles until well combined.

3. Assemble the casserole:

  • Preheat oven to 350°F (175°C).

  • In a greased 9×13-inch baking dish, spread the noodle mixture on the bottom.

  • Top evenly with the beef mixture.

  • Sprinkle with cheddar and mozzarella cheeses.

4. Bake:

  • Cover with foil and bake for 20 minutes.

  • Uncover and bake another 10–15 minutes, until bubbly and golden.

  • Let rest 5–10 minutes before serving.

  • Garnish with parsley, if desired.
