  • 2 pounds russet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter, softened
  • 1/2 cup sour cream
  • 1/2 cup milk (more if needed)
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 teaspoon paprika (for topping)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Cook the Potatoes:
    • In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain well.
  3. Mash the Potatoes:
