Almond Cake Recipe

Ingredients:

  • For the Cake:
    • 1 cup (100g) almond flour (or ground almonds)
    • 1 cup (120g) all-purpose flour
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 1/2 cup (115g) unsalted butter, softened
    • 1 cup (200g) granulated sugar
    • 3 large eggs
    • 1 tsp vanilla extract
    • 1/2 cup (120ml) milk (or almond milk for a nutty flavor)
    • Zest of 1 lemon (optional)
  • For the Glaze (optional):
    • 1 cup (120g) powdered sugar
    • 2-3 tbsp milk or almond milk
    • 1/2 tsp almond extract (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. Mix Dry Ingredients:
    • In a bowl, combine the almond flour, all-purpose flour, baking powder, baking soda, and salt. Whisk together and set aside.
  3. Cream Butter and Sugar:
    • In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).
  4. Add Eggs and Vanilla:
    • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest (if using).
  5. Combine Mixtures:
    • Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined. Do not overmix.
  6. Bake:
    • Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool:
    • Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  8. Make the Glaze (optional):
    • In a small bowl, whisk together the powdered sugar and milk until smooth. Add almond extract if using. Adjust the consistency by adding more milk or powdered sugar as needed.
  9. Serve:
    • Once the cake is completely cool, drizzle the glaze over the top, slice, and serve. Enjoy your almond cake with a cup of tea or coffee!

Tips:

  • Almond Flour: For best results, use finely ground almond flour. You can also make your own by grinding blanched almonds in a food processor.
  • Add-Ins: Consider adding chocolate chips, fresh fruits, or sliced almonds on top before baking for extra flavor and texture.
  • Storage: Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.

Enjoy this delicious and fragrant Almond Cake!
