Alfredo Salmon Pasta Recipe

Ingredients:

  • 2 salmon fillets (skinless)
  • 8 oz (225 g) fettuccine or pasta of choice

  • Salt and pepper, to taste
  • 1 tablespoon lemon juice
  • 2 garlic cloves, minced
  • 1 cup heavy cream (or half-and-half for a lighter version)

  • 2 tablespoons butter
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Instructions:

1. Cook the Pasta:

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving 1/4 cup of the pasta cooking water.

2. Cook the Salmon:

  • Season the salmon fillets with salt, pepper, and a splash of lemon juice.
  • Heat the olive oil (or butter) in a large skillet over medium heat. Add the salmon fillets and cook for about 4-5 minutes per side until the salmon is cooked through and flakes easily. Remove the salmon from the skillet and set it aside.

3. Make the Alfredo Sauce:

  • In the same skillet (wipe out any salmon bits if necessary), melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the heavy cream and let it simmer for 2-3 minutes, stirring frequently.
  • Gradually stir in the Parmesan cheese, letting it melt into the sauce. Cook until the sauce thickens, about 2-3 minutes. If the sauce becomes too thick, you can add a bit of the reserved pasta water to thin it out.

4. Combine the Pasta and Sauce:

  • Add the cooked pasta to the skillet with the Alfredo sauce, tossing to coat the pasta evenly with the creamy sauce.

5. Add the Salmon:

  • Gently flake the cooked salmon into bite-sized pieces and fold it into the pasta. Toss everything together gently so the salmon is well-distributed without breaking apart too much.

6. Serve:

  • Garnish the pasta with freshly chopped parsley and an extra sprinkle of Parmesan. Serve with lemon wedges on the side for a fresh, zesty touch.
