Molasses Cookies

Ingredients:

  • 2 ¼ cups all-purpose flour

  • ¼ teaspoon salt
  • ¾ cup unsalted butter, softened

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
  3. Cream Butter and Sugars: In a large bowl, using an electric mixer, beat the butter and granulated sugar until light and fluffy. Add the brown sugar and continue to beat until well combined.
  4. Add Egg and Molasses: Beat in the egg until well blended. Add the molasses and mix until smooth.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  6. Shape Cookies: Scoop tablespoon-sized balls of dough and roll them in granulated sugar if desired. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake: Bake for 10-12 minutes, or until the edges are set and the tops have cracked. The cookies will look soft but will firm up as they cool.
  8. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
