Easy Fried Rice Recipe

Ingredients:

  • 3 cups of cooked rice (preferably day-old)
  • 2 tablespoons of vegetable oil

  • 1 cup frozen peas and carrots, thawed
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil

Instructions:

  1. Prepare the Ingredients:
    • If you are using leftover rice, break up any clumps.
    • Thaw frozen peas and carrots.
    • Beat the eggs in a small bowl.
    • Chop the onion and garlic.
  2. Cook the Eggs:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside.
  3. Sauté the Vegetables:
    • In the same skillet, add the remaining 1 tablespoon of vegetable oil.
    • Add the chopped onion and minced garlic. Sauté for about 2 minutes until the onion becomes translucent and the garlic is fragrant.
    • Add the peas and carrots. Cook for another 2-3 minutes.
  4. Add the Rice:
    • Increase the heat to high.
    • Add the cooked rice to the skillet. Stir-fry the rice with the vegetables, breaking up any remaining clumps of rice.
  5. Season the Rice:
    • Add the soy sauce, oyster sauce (if using), and sesame oil.
    • Stir well to combine all the ingredients and evenly coat the rice with the sauces.
    • Season with salt and pepper to taste.
  6. Combine Everything:
    • Return the cooked eggs to the skillet.
    • Mix everything together until well combined and heated through.
  7. Garnish and Serve:
    • Remove the skillet from heat.
    • Garnish with chopped green onions.
    • Serve hot.
