Loaded Potato Soup Recipe

Loaded potato soup is a rich and creamy soup made with potatoes, often including additional toppings and mix-ins that mimic the flavors of a loaded baked potato. Here’s a basic recipe:

Loaded Potato Soup

Ingredients:

  • 6 slices bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 large russet potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions:

  1. In a large pot, cook the bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the bacon fat in the pot.
  2. Add the diced onion to the pot and sauté until softened, about 5 minutes. Add the garlic and cook for another minute.
  3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  4. Use an immersion blender to blend the soup until smooth, or transfer to a blender in batches.
  5. Stir in the heavy cream, shredded cheddar cheese, and sour cream. Cook until the cheese is melted and the soup is heated through.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with crispy bacon, chopped green onions, and additional shredded cheese if desired.
