Homemade Peach Ice Cream

Ingredients:

  • 4 large ripe peaches, peeled and sliced
  • 1 cup granulated sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions:

  1. Prepare the Peaches:
    • Place the sliced peaches in a blender or food processor and puree until smooth.
    • Set aside 1 cup of the peach puree for later use.
  2. Cook the Peach Mixture:
    • In a medium saucepan, combine the remaining peach puree and sugar.
    • Cook over medium heat, stirring occasionally, until the sugar has dissolved and the mixture starts to simmer.
    • Remove from heat and let it cool to room temperature.
  3. Mix the Base:
    • In a large bowl, whisk together the heavy cream, whole milk, vanilla extract, lemon juice, and a pinch of salt.
    • Stir in the cooled peach mixture until well combined.
  4. Chill the Mixture:
    • Cover the bowl with plastic wrap and refrigerate the mixture for at least 4 hours, or preferably overnight. This will allow the flavors to meld and the mixture to thicken.
  5. Churn the Ice Cream:
    • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
    • During the last few minutes of churning, add the reserved 1 cup of peach puree to create a peach swirl effect.
  6. Freeze:
    • Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.
  7. Serve:
    • Scoop the peach ice cream into bowls or cones and enjoy!

Tips:

  • For extra flavor, add a splash of peach liqueur or a pinch of cinnamon to the ice cream mixture.
  • You can also fold in small peach chunks during the last few minutes of churning for added texture.

Enjoy your homemade peach ice cream!
