Ingredients:

  • 2 lbs beef chuck roast, cut into chunks
  • Salt and pepper, to taste
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup water
  • 2 tbsp Worcestershire sauce
  • 2 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 8 oz egg noodles
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)

Instructions:

  1. Prepare the Beef:
    • Season the beef chunks with salt and pepper.
    • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
    • Add the beef in batches, browning on all sides. Remove and set aside.
  2. Cook the Aromatics:
    • In the same pot, add the chopped onion and cook until softened, about 5 minutes.
    • Add the minced garlic and cook for another minute.
  3. Create the Broth:
    • Return the beef to the pot.
    • Add the beef broth, water, Worcestershire sauce, thyme, rosemary, and bay leaves.
    • Bring to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the beef is tender.
  4. Cook the Noodles:
    • About 15 minutes before the beef is done, cook the egg noodles according to package instructions. Drain and set aside.
  5. Thicken the Sauce (Optional):
    • If you prefer a thicker sauce, mix the cornstarch and water, then stir it into the beef mixture. Cook for a few more minutes until the sauce thickens.
  6. Combine and Serve:
    • Add the cooked egg noodles to the beef mixture, stirring to combine.
    • Serve hot, garnished with fresh parsley if desired.
