Slow Cooker London Broil

Ingredients:

  • 2-3 pounds of London Broil (flank steak or top round)
  • 1 large onion, sliced
  • 3-4 garlic cloves, minced
  • 1 cup beef broth
  • 1/2 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 1/4 cup balsamic vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons brown sugar
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

Instructions:

  1. Marinate the Beef:
    • In a large bowl or zip-lock bag, combine the beef broth, soy sauce, Worcestershire sauce, balsamic vinegar, Dijon mustard, brown sugar, thyme, rosemary, black pepper, and salt.
    • Add the London Broil to the marinade, ensuring it’s fully coated. Marinate in the refrigerator for at least 4 hours or overnight for best results.
  2. Prepare the Slow Cooker:
    • Heat olive oil in a large skillet over medium-high heat. Remove the beef from the marinade (reserve the marinade) and sear it in the skillet for about 2-3 minutes on each side, until browned.

    • Place the sliced onions and minced garlic in the bottom of the slow cooker.
    • Lay the seared London Broil on top of the onions and garlic.
    • Pour the reserved marinade over the beef.
  4. Slow Cook:
    • Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and easily shredded with a fork.
  5. Serve:
    • Remove the beef from the slow cooker and let it rest for a few minutes before slicing or shredding.
    • Serve with the cooked onions and some of the cooking liquid as a sauce.
