Hummus Soup Recipe

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons tahini
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional toppings: crumbled feta cheese, toasted pine nuts, a drizzle of olive oil

Instructions:

  1. Prepare the Chickpeas:
    • In a blender or food processor, combine the chickpeas, tahini, garlic, and lemon juice. Blend until smooth and set aside.
  2. Cook the Aromatics:
    • In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until it becomes soft and translucent, about 5 minutes.
  3. Add the Spices:
    • Stir in the cumin, coriander, and smoked paprika. Cook for another minute until the spices are fragrant.
  4. Combine and Simmer:
    • Add the blended chickpea mixture to the pot. Pour in the vegetable broth and stir to combine. Bring the soup to a boil, then reduce the heat and let it simmer for about 15-20 minutes.
  5. Season and Blend:
    • Use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, you can blend half the soup and leave the rest as is. Season with salt and pepper to taste.
  6. Serve:
    • Ladle the soup into bowls. Garnish with fresh parsley, and if desired, add toppings like crumbled feta cheese, toasted pine nuts, or a drizzle of olive oil.

Enjoy your creamy and flavorful hummus soup!
