Classic Ratatouille

Ingredients:

  • 1 large eggplant, diced
  • 2 zucchinis, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 large tomatoes, diced (or one 28-ounce can of diced tomatoes)
  • 1/4 cup olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil, for garnish

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Vegetables: In a large bowl, combine the eggplant, zucchinis, yellow squash, bell peppers, and onion. Drizzle with 2 tablespoons of olive oil and season with salt and pepper. Toss to coat.
  3. Roast Vegetables: Spread the vegetables on a baking sheet and roast in the preheated oven for 25-30 minutes, until they are tender and starting to brown. Stir halfway through roasting.
  4. Cook Tomatoes and Garlic: While the vegetables are roasting, heat the remaining 2 tablespoons of olive oil in a large pot over medium heat.
