Chicken Stir-Fry

Chicken Stir-Fry is a versatile dish where bite-sized chicken pieces are quickly cooked with vegetables and a flavorful sauce. Here’s a simple and customizable recipe:

Ingredients:

  • 1 lb boneless, skinless chicken breasts or thighs, thinly sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas, etc.), sliced or chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced or grated
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon hoisin sauce (optional)
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth or water
  • 2 tablespoons vegetable oil, divided
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving

Instructions:

  1. Prepare the Chicken: In a bowl, combine the sliced chicken with 1 tablespoon soy sauce, cornstarch, and a pinch of salt and pepper. Mix well and set aside to marinate for about 10-15 minutes.
  2. Make the Sauce: In another bowl, mix together the remaining soy sauce, oyster sauce, hoisin sauce (if using), and chicken broth or water. Set aside.
  3. Stir-Fry the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through and lightly browned, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  4. Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of oil if needed. Add minced garlic and ginger, stir-frying for about 30 seconds until fragrant. Add the mixed vegetables and stir-fry for 3-4 minutes until they are crisp-tender.
  5. Combine and Simmer: Return the cooked chicken to the skillet. Pour the prepared sauce over the chicken and vegetables. Stir well to combine. Bring to a simmer and cook for another 2-3 minutes until the sauce thickens slightly and everything is heated through.
  6. Serve: Serve hot over cooked rice or noodles.
