
Honey Garlic Sausage Sweet Potatoes – Sweet, Savory & Easy Dinner

Ingredients
For the Sweet Potatoes:
- 2–3 medium sweet potatoes, peeled and cut into even cubes
- 2 tbsp olive oil
- 1 tsp paprika
- ½ tsp thyme
- ½ tsp rosemary
- Salt and pepper to taste
For the Sausage:
- 1 lb (450 g) sausage (pork, chicken, turkey, or plant-based)
- 2 tbsp honey (or maple syrup/agave)
- 2 cloves garlic, minced
Optional Add-Ins & Garnishes:
- 1 bell pepper, sliced
- 1 small onion, sliced
- 1 cup spinach or kale
- Toasted nuts or seeds
- Fresh herbs (parsley, thyme, rosemary)
Instructions
- Preheat oven & prepare sweet potatoes: Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, paprika, thyme, rosemary, salt, and pepper.
- Prepare sausages: Slice if desired. Toss with honey and minced garlic until evenly coated.
- Assemble on baking sheet: Arrange sweet potatoes and sausages on a lined baking sheet. Add optional vegetables if using. Avoid overcrowding for proper caramelization.
- Roast: Bake 25–35 minutes, stirring halfway, until sweet potatoes are tender and edges are caramelized and sausages are cooked through.
- Optional broil & garnish: Broil 2–3 minutes for extra crispness. Sprinkle with fresh herbs or toasted nuts before serving.
- Serve: Serve hot as a main dish, paired with a salad or grains if desired.
Notes
- Cut sweet potatoes evenly for consistent cooking.
- Roast at high heat for caramelization, but avoid burning the honey glaze.
- Toss sausages in honey-garlic mixture near the end if using lean sausage to prevent dryness.
- Optional vegetables can be added for extra color, nutrition, and flavor.
- Store leftovers in airtight containers: refrigerate up to 4 days or freeze up to 2 months. Reheat in oven or air fryer for best texture.
- For vegan version, use plant-based sausages and maple syrup or agave instead of honey.
