Ingredients
Cereal Base:
- 4 cups Fruity Pebbles cereal
- 3 tbsp butter
- 4 cups mini marshmallows
Creamy Filling:
- 8 oz (225 g) cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Fruit Roll-Up:
- 1–2 fruit roll-ups (any flavor)
Optional Add-ins/Garnishes:
- Fresh fruit (bananas, strawberries, blueberries)
- Sprinkles, edible glitter
- Chocolate or caramel drizzle
Instructions
- Melt Marshmallows: In a medium saucepan over low heat, melt butter and marshmallows together until smooth, stirring constantly.
- Combine Cereal: Remove from heat and stir in Fruity Pebbles until fully coated.
- Press Mixture: Spread the mixture onto parchment paper, pressing into a thin, even layer about 1/2 inch thick. Let cool slightly.
- Prepare Filling: In a separate bowl, mix softened cream cheese, powdered sugar, and vanilla until smooth.
- Assemble Rolls: Spread cream cheese mixture evenly over the cooled cereal base. Place fruit roll-up on top, then carefully roll the layers tightly using parchment paper to help guide the roll.
- Chill: Refrigerate for 15–20 minutes to set the roll.
- Slice and Serve: Use a sharp knife to cut into bite-sized sushi pieces. Wipe the knife clean between cuts for neat slices. Garnish with sprinkles, chocolate drizzle, or fresh fruit if desired.

- Layer Evenly: Ensure the cereal and cream cheese layers are spread evenly for uniform rolls.
- Chill Time: Let the roll set in the fridge before slicing for clean, intact pieces.
- Knife Tip: A serrated knife helps cut through sticky layers without squishing.
