    • 4 tablespoons butter
    • 1/4 cup all-purpose flour
    • 2 cups milk
    • 1/2 teaspoon nutmeg (optional)
    • Salt and pepper, to taste
    • 1/2 cup grated cheese (like Gruyère or additional Parmesan)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook the Risoni:
    • In a large pot, cook the risoni according to package instructions until al dente. Drain and set aside.
