Recipe for Green Bean, Wheatberry, and Barley Salad

Ingredients:

  • 1 cup wheatberries
  • 1 cup pearl barley
  • 200g green beans, trimmed and cut into 2-inch pieces

  • 2 tablespoons lemon juice
  • 1 tablespoon balsamic vinegar
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped red onion (optional)
  • 1/4 cup toasted almonds or walnuts (optional, for crunch)
  • Feta cheese (optional, for garnish)

Instructions:

  1. Cook the Wheatberries and Barley:
    • Rinse the wheatberries and barley under cold water.
    • In separate pots, bring each grain to a boil in salted water (about 3 cups of water for each grain).
    • Simmer the wheatberries for about 45-60 minutes and the barley for 30-40 minutes, or until they are tender but still chewy.
    • Drain both and set aside to cool.
  2. Blanch the Green Beans:
    • Bring a pot of salted water to a boil and add the green beans.
    • Cook for about 3-4 minutes, until tender but still crisp.
    • Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again after a few minutes.
  3. Prepare the Dressing:
    • In a small bowl, whisk together the olive oil, lemon juice, balsamic vinegar, minced garlic, salt, and pepper.
  4. Assemble the Salad:
    • In a large bowl, combine the cooled wheatberries, barley, and blanched green beans.

    • Pour the dressing over the salad and toss well to combine.
  5. Serve:
    • Taste and adjust the seasoning with more salt, pepper, or lemon juice if needed.
