Recipe for Vegetarian Okra Fried Rice

Ingredients:

  • 1 cup basmati or jasmine rice (cooked and cooled)
  • 1 cup fresh okra, sliced
  • 1 small onion, finely chopped
  • 1 bell pepper (red or yellow), chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil or olive oil
  • 1/4 teaspoon chili flakes (optional)
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish
  • 1 tablespoon lemon juice (optional)

Instructions:

  1. Prepare the Okra:
    • Heat 1 tablespoon of oil in a large pan or wok over medium heat.
    • Add the sliced okra and cook for 4-5 minutes until it becomes slightly crispy, stirring occasionally. Set aside on a plate.
  2. Sauté Vegetables:
    • In the same pan, add a little more oil if needed and the cumin seeds. Let them crackle for a few seconds.
    • Add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are soft and fragrant, about 3-4 minutes.
  3. Add Seasonings and Rice:
    • Stir in turmeric powder, chili flakes (if using), salt, and pepper.
    • Add the cooked rice and soy sauce, stirring well to combine with the vegetables. Cook for 3-4 minutes until heated through.
  4. Combine with Okra:
    • Gently fold the cooked okra back into the rice mixture and toss everything together.
    • Optionally, add lemon juice for a bright, tangy flavor.
  5. Serve:
    • Garnish with fresh cilantro or green onions and serve warm.

This dish is delicious on its own or paired with a side of yogurt or a fresh salad.
