Pastitsio is a traditional Greek baked pasta dish, often described as a Greek lasagna. It features layers of pasta, a rich meat sauce, and a creamy béchamel sauce. The dish is hearty and flavorful, making it a popular choice for gatherings and special occasions. Here’s how you can make it:

Recipe for Pastitsio

Ingredients:

For the Pasta:

  • 1 pound (450g) bucatini or penne pasta
  • 2 tablespoons olive oil
  • 2 large eggs
  • 1 cup grated Parmesan cheese (divided)
  • Salt, to taste

For the Meat Sauce:

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound (450g) ground beef or lamb
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1/2 cup red wine (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cinnamon
  • Salt and pepper, to taste

For the Béchamel Sauce:

  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • Salt, to taste

Instructions:

1. Prepare the Pasta:

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large bowl, mix the cooked pasta with olive oil, beaten eggs, half of the Parmesan cheese, and salt. Set aside.

2. Make the Meat Sauce:

  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic; sauté until translucent.
  • Add the ground beef or lamb and cook until browned.
  • Stir in the diced tomatoes, tomato paste, red wine (if using), oregano, cinnamon, salt, and pepper. Simmer for about 15-20 minutes until the sauce thickens. Set aside.

3. Prepare the Béchamel Sauce:

  • In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute until lightly golden.
  • Gradually add the milk, whisking continuously to avoid lumps. Cook until the sauce thickens (about 5-7 minutes).
  • Remove from heat and stir in the nutmeg, salt, and beaten eggs until well combined.

4. Assemble the Pastitsio:

  • Preheat the oven to 350°F (175°C).
  • In a greased baking dish, layer half of the pasta mixture evenly at the bottom.
  • Spread the meat sauce on top of the pasta.
  • Layer the remaining pasta over the meat sauce, then pour the béchamel sauce over the top. Spread evenly.
  • Sprinkle the remaining Parmesan cheese on top.

5. Bake:

  • Bake in the preheated oven for about 45 minutes to 1 hour, or until the top is golden brown and set.
  • Allow to cool for about 15-20 minutes before slicing and serving.
