Cheesy Veggie Wedges Recipe

Ingredients:

  • 4 medium potatoes (or sweet potatoes, zucchini, or a mix), cut into wedges
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 cup (100g) shredded cheddar cheese (or any melty cheese like mozzarella)
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)
  • Sour cream or your favorite dipping sauce (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Veggies:
    • Cut your chosen vegetables (potatoes, sweet potatoes, zucchini, etc.) into wedges. Try to make them uniform in size for even cooking.
  3. Season the Wedges:
    • Place the veggie wedges in a large bowl. Drizzle with olive oil and sprinkle garlic powder, paprika, salt, and pepper. Toss the wedges until they’re evenly coated with the seasoning.
  4. Bake the Wedges:
    • Arrange the seasoned wedges in a single layer on the prepared baking sheet.
    • Bake in the preheated oven for 25-30 minutes (for potatoes or sweet potatoes) or 20-25 minutes (for zucchini or carrots) until the wedges are golden brown and crispy on the edges. Flip them halfway through for even crisping.
  5. Add Cheese:
    • Once the wedges are crispy, remove them from the oven. Sprinkle the shredded cheddar cheese and Parmesan (if using) over the top of the wedges.
    • Return the wedges to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Remove from the oven and sprinkle fresh parsley on top.
    • Serve with a side of sour cream or your favorite dipping sauce.

Tips:

  • Veggie Variations: You can use a mix of different vegetables for more variety. Sweet potatoes and zucchini work especially well.
  • Cheese Choices: Try using other cheeses like Monterey Jack, pepper jack, or even blue cheese for added flavor.
  • Extra Crispiness: For an even crispier finish, broil the wedges for the last 2 minutes after adding the cheese.

These Cheesy Veggie Wedges are perfect as a side dish, snack, or party appetizer, offering the satisfying crunch of baked veggies with a rich, cheesy topping.
