Ingredients:

  • 2 cups mashed potatoes (leftovers work great)
  • 1 cup shredded cheddar cheese
  • 1/4 cup cooked bacon, crumbled
  • 2 tablespoons green onions, chopped
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups breadcrumbs (Panko for extra crunch)
  • Vegetable oil, for frying

Instructions:

1. Prepare the filling:

  • In a large bowl, combine the mashed potatoes, cheddar cheese, bacon, green onions, garlic powder, salt, and pepper. Mix until well combined.

2. Shape the potato balls:

  • Scoop out about 1-2 tablespoons of the potato mixture and roll it into a ball. Continue until all the mixture is used. You should have about 12-15 balls.

3. Set up the breading station:

  • Place the flour in one shallow dish, the beaten eggs in another, and the breadcrumbs in a third dish.

4. Bread the potato balls:
