Baked Cinnamon Sugar Banana Lumpia

Banana Lumpia is a popular Filipino dessert known as Turon, traditionally deep-fried. This version uses baking for a lighter take, with bananas rolled in lumpia (or spring roll) wrappers, coated in cinnamon sugar, and baked to perfection.

Ingredients:

  • 4 ripe bananas (preferably saba bananas or plantains, but regular bananas will work)
  • 8 lumpia wrappers (or spring roll wrappers)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter, melted (for brushing)
  • 1 egg, beaten (for sealing the wrappers)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

2. Prepare the Filling:

  • In a small bowl, mix together the brown sugar and ground cinnamon.
  • Slice the bananas in half lengthwise, and then cut each half again into two, giving you four pieces per banana.

3. Wrap the Bananas:

  • Lay one lumpia wrapper on a flat surface. Place a banana slice near one corner of the wrapper. Sprinkle about 1 teaspoon of the cinnamon sugar mixture over the banana.
  • Fold the corner over the banana, then fold the sides in, and roll it up tightly like a burrito. Use a little beaten egg to seal the edge of the wrapper.
  • Repeat this process for all the banana slices.

4. Brush with Butter:

  • Place the wrapped bananas on the prepared baking sheet. Brush each lumpia with the melted butter.

5. Bake the Lumpia:

  • Bake in the preheated oven for 12-15 minutes, or until the lumpia are golden brown and crispy.

6. Add Cinnamon Sugar Topping:

  • Once baked, remove the lumpia from the oven and immediately sprinkle them with granulated sugar and a little more cinnamon, if desired.

7. Serve:

  • Let them cool slightly before serving. Serve warm, either as is or with a scoop of vanilla ice cream for a delicious dessert.

Tips:

  • Alternative Fillings: You can add a slice of jackfruit for a more traditional Turon.
  • Extra Sweetness: Drizzle with caramel sauce or chocolate syrup before serving.
  • Crispier Option: For extra crispiness, brush the lumpia with butter halfway through baking.
