Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk (or milk mixed with 1 tablespoon of vinegar)
- Nutella, for filling (about 1/2 cup)
- 1/4 cup granulated sugar (for coating)
- 2 teaspoons ground cinnamon (for coating)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with non-stick spray.
2. Mix Dry Ingredients:
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
3. Cream Butter and Sugar:
- In a large bowl, cream together the butter and 3/4 cup sugar until light and fluffy (about 2-3 minutes).
4. Add Eggs and Vanilla:
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
5. Combine Dry and Wet Ingredients:
- Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture. Mix until just combined; do not overmix.
6. Fill Muffin Tins:
- Spoon a small amount of batter into each muffin cup (about 1 tablespoon).
- Add about 1 teaspoon of Nutella on top of the batter in each cup.
- Top with more batter, filling the cups about 2/3 full.
7. Bake:
- Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the muffin (avoiding the Nutella center) comes out clean.
8. Cinnamon Sugar Coating:
- While the muffins are baking, mix the 1/4 cup sugar and 2 teaspoons cinnamon in a shallow bowl.
- Once the muffins are done, let them cool in the pan for about 5 minutes before transferring them to a wire rack.
9. Coat Muffins:
- While still warm, roll the tops of the muffins in the cinnamon sugar mixture to coat.
10. Serve:
- Allow the muffins to cool slightly, then enjoy them warm!
Tips:
- Nutella Swirl: For a fun variation, swirl the Nutella into the batter before baking instead of stuffing it in the center.
- Storage: Store any leftovers in an airtight container at room temperature for up to 3 days. They can also be frozen for later enjoyment.
These Nutella Stuffed Cinnamon Sugar Muffins are sure to be a hit with family and friends! Enjoy!
