Nutella Stuffed Cinnamon Sugar Muffins

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk (or milk mixed with 1 tablespoon of vinegar)
  • Nutella, for filling (about 1/2 cup)
  • 1/4 cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with non-stick spray.

2. Mix Dry Ingredients:

  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3. Cream Butter and Sugar:

  • In a large bowl, cream together the butter and 3/4 cup sugar until light and fluffy (about 2-3 minutes).

4. Add Eggs and Vanilla:

6. Fill Muffin Tins:

  • Add about 1 teaspoon of Nutella on top of the batter in each cup.
  • Top with more batter, filling the cups about 2/3 full.

7. Bake:

8. Cinnamon Sugar Coating:

  • While the muffins are baking, mix the 1/4 cup sugar and 2 teaspoons cinnamon in a shallow bowl.
