Mini Chicken Quesadillas

These bite-sized mini chicken quesadillas are perfect for appetizers, snacks, or a fun dinner option. They’re filled with seasoned chicken, melty cheese, and all the classic Mexican flavors.

Ingredients:

  • 2 cups cooked and shredded chicken (rotisserie chicken works great)
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (optional)
  • 1 packet taco seasoning (or homemade)
  • 1/4 cup water
  • 1 1/2 cups shredded Mexican blend cheese or cheddar cheese
  • 10-12 small flour tortillas (6-inch size)
  • Olive oil or melted butter for brushing
  • Optional toppings: sour cream, guacamole, salsa, chopped cilantro

Instructions:

1. Prepare the Chicken Filling:

  • Heat 1 tablespoon of olive oil in a skillet over medium heat.
  • Add diced onions (and bell peppers if using) and sauté for 3-4 minutes until soft.
  • Add the shredded chicken, taco seasoning, and water. Stir and cook for 4-5 minutes until the mixture is well seasoned and slightly saucy.
  • Remove from heat and let cool slightly.

2. Assemble the Quesadillas:

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Lay out half of the tortillas and spoon a small amount of the chicken mixture onto one half of each tortilla. Sprinkle shredded cheese on top of the chicken.
  • Fold the tortilla in half, pressing down gently to seal the quesadilla.

3. Bake the Quesadillas:

  • Place the folded quesadillas on the prepared baking sheet. Lightly brush the tops with olive oil or melted butter to help them crisp up.
  • Bake for 8-10 minutes, or until the quesadillas are golden brown and the cheese is melted.

4. Serve:

  • Cut each mini quesadilla in half or quarters for easy serving.
  • Serve with your favorite toppings like sour cream, guacamole, salsa, or fresh chopped cilantro.

Tips:

  • Make it Spicy: Add diced jalapeños or a dash of hot sauce to the chicken mixture for extra heat.
  • Customize the Fillings: Add black beans, corn, or sautéed mushrooms to the quesadilla filling for extra texture and flavor.
  • Stovetop Option: Cook the mini quesadillas on a griddle or skillet over medium heat for 2-3 minutes on each side until crispy and golden brown.
