Ingredients:

For the Meatloaf:

  • 1 1/2 pounds ground beef (or a mix of beef and pork)
  • 1 cup breadcrumbs (plain or seasoned)
  • 1/2 cup milk
  • 1/2 cup onion, finely chopped
  • 1/4 cup ketchup (plus extra for topping)
  • 2 large eggs
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon Italian seasoning (optional)

For the Gravy:

  • 1 tablespoon vegetable oil
  • 1/4 cup onion, finely chopped
  • 2 cups beef broth
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cornstarch (mixed with 2 tablespoons water to make a slurry)
  • Salt and pepper, to taste

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Meatloaf Mixture:
    • In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, ketchup, eggs, Worcestershire sauce, salt, pepper, garlic powder, and Italian seasoning. Mix gently until just combined (avoid over-mixing).
  3. Shape the Meatloaf:
    • Transfer the meat mixture to a lightly greased loaf pan or shape it into a loaf on a baking sheet. If desired, spread a thin layer of ketchup on top for added flavor and moisture.
  4. Bake:
    • Bake in the preheated oven for about 1 hour or until the internal temperature reaches 160°F (70°C). Let it rest for about 10 minutes before slicing.

Gravy Instructions:

  1. Sauté the Onion:
    • In a medium saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes.
  2. Add the Broth:
    • Pour in the beef broth, ketchup, and Worcestershire sauce. Bring to a simmer.
  3. Thicken the Gravy:
    • Add the cornstarch slurry to the simmering gravy, stirring constantly until it thickens. Season with salt and pepper to taste.
  4. Serve:
    • Slice the meatloaf and serve with the warm gravy poured over the top.
