Here’s a refreshing and easy recipe for Homemade Horchata, a traditional Mexican rice drink that’s sweet, creamy, and perfect for warm weather!

Homemade Horchata Recipe

Ingredients:

  • 1 cup long-grain white rice
  • 1/2 cup blanched almonds (or substitute with 1/2 cup of cinnamon for a different flavor)
  • 1 cinnamon stick (or 1 teaspoon ground cinnamon)
  • 4 cups water (for soaking)
  • 4 cups cold water (for blending)
  • 1 cup milk (dairy or non-dairy, like almond or coconut milk)
  • 1/2 cup sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Ground cinnamon, for garnish (optional)

Instructions:

  1. Soak the Rice and Almonds:
    • Rinse the rice under cold water until the water runs clear. In a large bowl, combine the rinsed rice, blanched almonds, and the cinnamon stick.
    • Add 4 cups of water and let it soak for at least 4 hours or overnight in the refrigerator.
  2. Blend the Mixture:
    • After soaking, remove the cinnamon stick and pour the rice and almond mixture (with the soaking water) into a blender. Add an additional 4 cups of cold water.
    • Blend until the mixture is smooth and creamy, about 1-2 minutes.
  3. Strain the Mixture:
    • Strain the blended mixture through a fine mesh strainer or cheesecloth into a large pitcher. This will remove the solid bits, leaving you with a smooth liquid.
  4. Add Remaining Ingredients:
    • To the strained liquid, add the milk, sugar, vanilla extract, and a pinch of salt. Stir well to combine. Taste and adjust sweetness if needed.
  5. Serve:
    • Chill the horchata in the refrigerator or serve over ice. Garnish with a sprinkle of ground cinnamon if desired.

Enjoy!

This Homemade Horchata is a delicious, refreshing drink that pairs wonderfully with spicy foods and can be enjoyed year-round!
