Authentic Beef Barbacoa Recipe

Ingredients:

  • 2-3 lbs beef chuck roast or brisket
  • 2-3 dried guajillo peppers
  • 2-3 dried ancho peppers
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1-2 bay leaves
  • 1/4 cup apple cider vinegar or lime juice
  • 1 cup beef broth
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Chilies:
    • Remove the stems and seeds from the guajillo and ancho peppers. Toast them lightly in a dry skillet over medium heat for about 1-2 minutes until fragrant. Be careful not to burn them.
    • Soak the toasted peppers in hot water for about 15-20 minutes until softened. Drain and set aside.
  2. Blend the Marinade:
    • In a blender, combine the softened chilies, garlic, onion, cumin, oregano, apple cider vinegar (or lime juice), and beef broth. Blend until smooth. Add salt and pepper to taste.
  3. Prepare the Beef:
    • Season the beef chuck roast or brisket with salt and pepper. Place it in the slow cooker.
