Ingredients:

For the Vanilla Cake:

  • 3 cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon pure vanilla extract
  • 1 cup buttermilk (or milk)

For the Fudge Filling:

  • 1 cup semi-sweet chocolate chips
  • 1 can (14 ounces) sweetened condensed milk
  • 1 teaspoon vanilla extract

For the Glaze (optional):

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan.

2. Make the Fudge Filling:

  • In a saucepan over low heat, combine the chocolate chips and sweetened condensed milk. Stir until the chocolate is melted and the mixture is smooth. Remove from heat and stir in the vanilla extract. Set aside to cool slightly.

3. Prepare the Cake Batter:

  • In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  • Gradually add the dry ingredients, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.

4. Assemble the Cake:

  • Pour half of the cake batter into the prepared Bundt pan. Carefully spoon the fudge filling over the batter, making sure to keep it away from the edges. Pour the remaining batter over the fudge filling.

5. Bake:

  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the cake (not the fudge filling) comes out clean.
  • Allow the cake to cool in the pan for about 15 minutes before inverting it onto a wire rack to cool completely.

6. Make the Glaze (optional):

  • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk if necessary.

7. Serve:

  • Once the cake is completely cool, drizzle the glaze over the top if desired. Slice and enjoy!

Tips:

  • Storage: Keep any leftover cake covered at room temperature for up to 3 days or in the refrigerator for up to a week.
  • Serving Suggestions: This cake pairs wonderfully with whipped cream or vanilla ice cream for an extra treat!

Enjoy your Fudge Filled Vanilla Bundt Cake!
