This Easy Skillet Taco Rice is a simple, one-pan meal that’s full of bold Mexican flavors. It combines seasoned ground beef, fluffy rice, and classic taco toppings for a quick weeknight dinner or an easy dish to serve at a gathering.

Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 bell pepper, diced (optional)
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice (uncooked)
  • 1 (10 oz) can diced tomatoes with green chilies (such as Rotel)
  • 1 (8 oz) can tomato sauce
  • 1 1/2 cups beef broth (or chicken broth)
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Taco toppings: sour cream, avocado, jalapeños, cilantro, lime wedges, etc.

Instructions:

1. Cook the ground beef:

  • In a large skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain any excess fat if needed.

2. Add veggies:

  • Add the diced onion, bell pepper (if using), and garlic to the skillet. Cook for about 2-3 minutes until softened.

3. Stir in the rice:

  • Add the uncooked rice to the skillet and stir to combine with the beef and veggies. Let the rice toast for 1-2 minutes to enhance its flavor.

6. Add cheese:

7. Serve:
