One Pot Beef Stew Recipe

Ingredients:

  • For the Stew:
    • 2 lbs beef chuck, cut into 1-inch cubes
    • Salt and pepper, to taste
    • 2 tablespoons olive oil
    • 1 large onion, chopped
    • 3 cloves garlic, minced
    • 4 cups beef broth
    • 1 cup carrots, sliced
    • 1 cup potatoes, diced (Yukon Gold or russet)
    • 1 cup celery, chopped
    • 1 cup frozen peas (optional)
    • 2 tablespoons tomato paste
    • 1 teaspoon dried thyme
    • 1 teaspoon dried rosemary
    • 1 bay leaf
    • 2 tablespoons Worcestershire sauce
    • 1 tablespoon cornstarch (optional, for thickening)
    • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sear the Beef:
    • Season the beef cubes with salt and pepper.
    • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef in batches and sear until browned on all sides. Remove the beef and set it aside.
  2. Sauté the Vegetables:
    • In the same pot, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion becomes translucent.
  3. Add Remaining Ingredients:
    • Return the beef to the pot. Add the beef broth, carrots, potatoes, celery, tomato paste, thyme, rosemary, bay leaf, and Worcestershire sauce. Stir well to combine.
  4. Simmer:
    • Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender. Stir occasionally.
  5. Add Peas (Optional):
    • If using, add the frozen peas during the last 10 minutes of cooking.
  6. Thicken the Stew (Optional):
    • If you prefer a thicker stew, mix the cornstarch with a little cold water to create a slurry. Stir it into the stew and let it simmer for a few more minutes until thickened.
  7. Serve:
    • Remove the bay leaf before serving. Garnish with fresh parsley if desired. Enjoy your hearty beef stew!

Tips:

  • Vegetable Variations: Feel free to add other vegetables like green beans or mushrooms based on your preference.
  • Make Ahead: This stew tastes even better the next day as the flavors meld, so it’s great for meal prep!
  • Slow Cooker Option: You can also make this stew in a slow cooker. Just sear the beef first, then transfer everything to the slow cooker and cook on low for 6-8 hours.

Enjoy your One Pot Beef Stew! It’s a classic comfort dish that’s perfect for chilly days.
