Chocolate Crème Cookie Pie Recipe

Ingredients:

  • For the Cookie Crust:
    • 24 Oreo cookies (or any chocolate sandwich cookies)
    • 5 tbsp unsalted butter, melted
  • For the Chocolate Crème Filling:
    • 1 cup heavy cream
    • 1 cup whole milk
    • ¾ cup granulated sugar
    • ¼ cup unsweetened cocoa powder
    • 3 large egg yolks
    • 3 tbsp cornstarch
    • 2 tsp vanilla extract
    • 4 oz semi-sweet chocolate, chopped
    • Pinch of salt
  • For the Topping:
    • Whipped cream (for garnish)
    • Chocolate shavings or mini chocolate chips (for garnish)

Instructions:

  1. Prepare the Cookie Crust:
    • Preheat your oven to 350°F (175°C).
    • In a food processor, crush the Oreo cookies into fine crumbs.
    • In a mixing bowl, combine the cookie crumbs with melted butter until well combined.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
    • Bake the crust for about 10 minutes. Remove from the oven and let it cool completely.
  2. Make the Chocolate Crème Filling:
    • In a medium saucepan, combine the heavy cream, milk, sugar, cocoa powder, and salt. Heat over medium heat until the mixture is steaming but not boiling.
    • In a separate bowl, whisk together the egg yolks and cornstarch until smooth.
    • Gradually add a small amount of the hot cream mixture to the egg yolk mixture, whisking constantly to temper the eggs.
    • Pour the egg mixture back into the saucepan with the remaining cream mixture. Cook over medium heat, whisking constantly, until the mixture thickens and bubbles (about 5-7 minutes).
    • Remove from heat and stir in the vanilla extract and chopped chocolate until smooth.
  3. Assemble the Pie:
    • Pour the chocolate crème filling into the cooled cookie crust. Smooth the top with a spatula.
    • Cover the pie with plastic wrap and refrigerate for at least 4 hours or overnight until set.
  4. Serve:
    • Once the pie is set, remove it from the refrigerator.
    • Top with whipped cream and sprinkle chocolate shavings or mini chocolate chips on top for garnish.
    • Slice and serve chilled.

Tips:

  • Make-Ahead: This pie is perfect for making ahead of time since it needs to chill.
  • Variations: You can add a layer of chocolate ganache on top before adding whipped cream for an extra indulgent touch.
  • Storage: Store leftovers in the refrigerator for up to 3 days.

This Chocolate Crème Cookie Pie is a delightful dessert that’s sure to impress your guests and satisfy your chocolate cravings! Enjoy!
