Pumpkin Spice & Pecan Crumb Cake Recipe

Ingredients

For the Cake:

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • ½ tsp salt
  • 1 cup pumpkin puree
  • ½ cup vegetable oil (or melted butter)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

For the Pecan Crumb Topping:

  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ cup unsalted butter, melted
  • ¾ cup chopped pecans

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan or line it with parchment paper.
  2. Make the Crumb Topping:
    • In a bowl, combine the flour, brown sugar, cinnamon, and nutmeg.
    • Stir in the melted butter until crumbly, then fold in the chopped pecans. Set aside.
  3. Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  4. Mix Wet Ingredients:
    • In a separate large bowl, whisk together the pumpkin puree, oil (or melted butter), sugar, eggs, and vanilla extract until smooth.
  5. Combine:
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Don’t overmix.
  6. Assemble the Cake:
    • Pour the cake batter into the prepared pan and spread it evenly.
    • Sprinkle the pecan crumb topping over the batter.
  7. Bake:
    • Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
