The Best Pork Carnitas Recipe

The Best Pork Carnitas Recipe

Pork carnitas are a delicious Mexican dish made from slow-cooked, seasoned pork that is shredded and typically served in tacos, burritos, or on top of nachos. The key to great carnitas is the cooking method, which allows the pork to become tender and flavorful. Here’s how to make the best pork carnitas at home!

Ingredients:

  • 3-4 lbs pork shoulder (also known as pork butt)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1-2 jalapeños, chopped (optional, for heat)
  • 1 orange, juiced (reserve the spent halves)
  • 1 lime, juiced
  • 1 cup chicken broth
  • Fresh cilantro, chopped (for garnish)
  • Corn tortillas (for serving)

Instructions:

  1. Prepare the Pork:
    • Trim any excess fat from the pork shoulder and cut it into large chunks (about 3-4 pieces).
  2. Sear the Pork:
    • In a large skillet or Dutch oven, heat the olive oil over medium-high heat.
    • Add the pork chunks and sear on all sides until browned (about 5-7 minutes). You may need to do this in batches to avoid overcrowding the pan. Remove the pork and set it aside.
  3. Sauté Aromatics:
    • In the same pot, add the chopped onion and cook until softened (about 3-4 minutes).
    • Stir in the minced garlic, cumin, oregano, chili powder, smoked paprika, salt, and pepper. Cook for an additional minute until fragrant.
  4. Slow Cook:
    • Return the pork to the pot and add the orange juice, lime juice, chicken broth, and the reserved orange halves. If using, add the chopped jalapeños for a spicy kick.
    • Bring to a simmer, then cover and reduce the heat to low. Cook for about 4-6 hours, or until the pork is fork-tender. Alternatively, you can use a slow cooker on low for the same amount of time.
  5. Shred the Pork:
    • Once the pork is tender, remove it from the pot and let it cool slightly. Use two forks to shred the meat.
  6. Crisp the Carnitas (optional):
    • Preheat your oven to 450°F (232°C).
    • Spread the shredded pork on a baking sheet and drizzle with some of the cooking liquid (just enough to moisten).
    • Roast in the oven for about 10-15 minutes until the edges of the pork are crispy and caramelized.
  7. Serve:
    • Serve the carnitas warm in corn tortillas, topped with fresh cilantro, diced onions, lime wedges, and any other desired toppings like avocado or salsa.

Tips:

  • For Flavor: You can add other spices or herbs to suit your taste, such as bay leaves or thyme.
  • Make Ahead: Carnitas can be made a day in advance; simply reheat and crisp in the oven before serving.
  • Freezing: These carnitas freeze well. Store in an airtight container for up to 3 months.

Enjoy your delicious homemade pork carnitas in tacos, burritos, or even on nachos!
