Steak kebabs are a delicious and versatile dish perfect for grilling season or any time you crave a flavorful meal. They can be customized with your favorite veggies and marinades!

Ingredients:

  • 1 ½ pounds of sirloin steak or ribeye, cut into 1-inch cubes
  • 2 bell peppers (any color), cut into 1-inch pieces
  • 1 medium onion, cut into wedges
  • 1 zucchini, sliced into thick rounds
  • Cherry tomatoes (optional)

For the Marinade:

  • ¼ cup olive oil
  • ¼ cup soy sauce
  • 2 tablespoons balsamic vinegar (or red wine vinegar)
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions:

  1. Prepare the Marinade:
    • In a mixing bowl, whisk together the olive oil, soy sauce, balsamic vinegar, Worcestershire sauce, minced garlic, Dijon mustard, oregano, paprika, salt, and pepper.
  2. Marinate the Steak:
    • Place the cubed steak in a large resealable plastic bag or bowl. Pour the marinade over the steak, ensuring all pieces are well coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Preheat the Grill:
    • Preheat your grill to medium-high heat (about 400°F or 200°C). If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Assemble the Kebabs:
    • Thread the marinated steak, bell peppers, onion, zucchini, and cherry tomatoes onto the skewers, alternating between the meat and vegetables.
  5. Grill the Kebabs:
    • Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the steak reaches your desired level of doneness (135°F for medium-rare, 145°F for medium). The vegetables should be tender and slightly charred.
  6. Serve:
    • Remove the kebabs from the grill and let them rest for a few minutes before serving. Enjoy them on their own, or with rice, couscous, or a fresh salad.
