  • 1 pint fresh raspberries (about 2 cups)
  • 1 cup heavy whipping cream

  • 1 package (14.4 oz) graham crackers
  • 1/2 cup raspberry jam or preserves (optional)
  • Fresh mint leaves (for garnish, optional)

Instructions:

  1. Prepare the Cream:
    • In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Use an electric mixer to beat until soft peaks form. Be careful not to overbeat; you want a smooth, fluffy texture.
  2. Layer the Cake:
    • In a 9×9 inch (or similar size) baking dish, spread a thin layer of the whipped cream mixture on the bottom.
    • Place a layer of graham crackers on top, breaking them as needed to fit.
    • Spread another layer of whipped cream over the graham crackers, then add a layer of fresh raspberries. If desired, you can also spread a thin layer of raspberry jam on this layer for extra sweetness.
  3. Repeat Layers:
    • Continue layering with graham crackers, whipped cream, and raspberries until you run out of ingredients, finishing with a layer of whipped cream on top. You can reserve a few raspberries for garnish.
  4. Chill:
