Filet Mignon Recipe
Filet mignon, known for its tenderness and rich flavor, is a true showstopper. It’s surprisingly easy to cook at home with just a few ingredients and some attention to detail.
Ingredients:
- 2 filet mignon steaks (about 1.5-2 inches thick)
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 2-3 cloves garlic, smashed
- Fresh rosemary or thyme sprigs
- Salt and freshly ground black pepper
- Optional: red wine or beef broth for deglazing
Instructions:
- Prepare the Steaks:
- Take the steaks out of the fridge about 30 minutes before cooking to allow them to reach room temperature.
- Pat the steaks dry with paper towels, and season generously with salt and freshly ground black pepper on both sides.
- Preheat the Oven (if using for finishing):
- Preheat your oven to 400°F (200°C).
- Sear the Filet Mignon:
- Heat a heavy skillet (cast iron works best) over medium-high heat and add the olive oil. Once the oil is shimmering, place the steaks in the pan.
- Sear the steaks for 2-3 minutes on each side, until a brown crust forms. Don’t move them around—let them sear undisturbed.
- Add Butter and Herbs:
- Lower the heat to medium, add the butter, garlic, and rosemary or thyme sprigs to the pan.
- Tilt the pan and use a spoon to baste the steaks with the melted butter for about a minute.
- Finish in the Oven (Optional):
- If your steaks are thicker and need additional cooking, transfer the skillet to the preheated oven. Cook for about 4-6 minutes for medium-rare or 6-8 minutes for medium, depending on the thickness of the steaks and your desired doneness.
- Rest the Steaks:
- Remove the steaks from the skillet and let them rest for 5-10 minutes. This allows the juices to redistribute throughout the meat.
- Optional Deglaze:
- If desired, deglaze the pan with red wine or beef broth, scraping up any browned bits to make a quick pan sauce. Let it reduce slightly before pouring over the steaks.
