Ingredients:

  • 1 fully cooked bone-in ham (about 8-10 pounds)
  • 1 cup honey
  • ½ cup brown sugar
  • ¼ cup Dijon mustard
  • ¼ teaspoon ground cloves
  • ½ teaspoon cinnamon
  • ½ teaspoon black pepper
  • 1 tablespoon apple cider vinegar (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 325°F (160°C).
  2. Prepare the Ham:
    • If the ham has a skin, remove it. Score the surface of the ham in a diamond pattern (about 1-inch apart) to allow the glaze to penetrate.
  3. Make the Glaze:
    • In a small saucepan, combine honey, brown sugar, Dijon mustard, ground cloves, cinnamon, black pepper, and apple cider vinegar (if using). Heat over medium-low heat until the sugar dissolves and the mixture is well combined.
  4. Bake the Ham:
    • Place the ham on a rack in a roasting pan, cut side down. Brush about half of the glaze over the ham.
  5. Roasting:
    • Cover the ham loosely with aluminum foil and bake for about 15 minutes per pound, or until heated through (about 2-2.5 hours total). Remove the foil for the last 30 minutes of baking.
  6. Glaze Again:
    • During the last 30 minutes of baking, brush the remaining glaze over the ham every 10 minutes to build a nice caramelized crust.
  7. Rest and Serve:
    • Once done, remove the ham from the oven and let it rest for about 15-20 minutes before slicing. Serve warm.
